Citrus & saffron

Candied citrus meets saffron. A fragrant change of pace for your festive table.

At its heart? Sourdough.

Flour, water, time and the experience to know when the dough is ready.

Height alone does not make a panettone special. Careful dough development matters. Fiasconaro uses natural sourdough fermentation; its family story began in Castelbuono in 1953. The range now brings together classic recipes, pistachio creations and gift editions.

FIASCONARO · 1000 g

Classico

The generous classic with raisins and candied orange. For a table that always welcomes another slice.

Pineapple, apricot & pistachio

Pineapple and apricot beneath a pistachio glaze: a festive favourite with a fruity twist.

Fruit meets a pistachio accent in this variation. It is an alternative to put beside a classic panettone when you want to offer something different. Cut small tasting portions and compare them with Classico: dessert becomes a shared discovery, with room for everyone’s preferences.

Hazelnut

Raisins in the dough, hazelnuts on the glaze. Soft meets crunchy, especially lovely alongside an espresso.

If you enjoy hazelnuts, consider this variety for your afternoon coffee table. It offers a different accent from recipes centred on fruit. The one-kilogram format can be shared among several guests or given as a generous present. Check the shop for ingredients and allergen information.

Ingredients and method

Ingredients

  • 500 g strong white bread flour
  • 7 g dried instant yeast
  • 150 ml lukewarm whole milk
  • 2 medium eggs and 2 yolks
  • 100 g sugar, 8 g salt
  • 120 g soft butter
  • 150 g raisins and 100 g candied orange peel
  • 1 tsp vanilla extract and finely grated zest of one unwaxed orange

Method

  1. Briefly soak the raisins in warm water, then drain and dry well. Prepare a tall paper panettone mould rated for roughly 1.5 kg of dough; check its stated capacity.
  2. Knead flour, yeast, milk, eggs, yolks, sugar, salt, vanilla and zest into a smooth dough. Work in the butter gradually. Allow roughly 15–25 minutes in a mixer, depending on the appliance; pause if the dough becomes warm.
  3. Cover and leave in a moderately warm place until visibly expanded. Allow 2–3 hours, sometimes longer for this rich dough. Gently work in the raisins and candied orange.
  4. Shape into a ball, place in the mould and let rise to about 2 cm below its rim. The dough’s actual rise matters more than a fixed time.
  5. Bake low in a preheated conventional oven at 170 °C for roughly 60–80 minutes. Cover loosely if the top darkens too much. Aim for about 94–96 °C in the centre; timing depends on the mould and oven.
  6. Use two suitable metal skewers through the lower part of the paper mould to suspend the loaf securely upside down. Cool completely before slicing or wrapping airtight.

DOLCE&GABBANA × FIASCONARO

Dolce&Gabbana and Fiasconaro. Sicily, ready to gift.

Dolce&Gabbana × Fiasconaro – Barocco Bianco di Sicilia 1000 gExplore Barocco Bianco · 1000 g ↗

A tin that sparks curiosity. An aroma that invites the first slice. A panettone that brings the pleasure of beautiful things together with the pleasure of good food.

Two signatures, a shared connection.

Since 2018, Dolce&Gabbana and Fiasconaro have brought Italian design and Sicilian pastry-making together. Fiasconaro creates the sweet side, while Dolce&Gabbana gives the collection its visual identity. Sicily is the meeting point, inspiring both the flavours and the imagery on the packaging.

More than wrapping.

The colourful patterns recall Sicilian carts, ceramics and mosaics. Enjoying the gift begins before opening it. After the last slice, the tin can find a new place at home: for keepsakes, as part of a collection or simply adding colour to a shelf. How to use it next is entirely up to the person receiving it.

Which flavour suits whom?

The 100 g size makes a thoughtful little gift. A larger format suits a table of friends or family. Citrus and saffron, chestnuts and chocolate, or pistachio cream each bring a different character. Our suggestion: start with the person’s favourite flavours, then consider the occasion. Beautiful packaging becomes a truly welcome gift when what is inside is just as enjoyable.

Bonci takes us to Montevarchi in Tuscany, where the family has practised pastry-making since 1953. The Panbriacone, created in 1995, brought its aromatic leavened specialities to the fore. Tronchetti continue that idea in an elongated shape. Rum and chocolate make this version a dessert for adults, with plenty of flavour even in a small slice.

What makes panettone special?

The tall dome catches your eye first. Cut it open and you find a soft, shreddable crumb. Butter and eggs add richness, while fermentation develops aroma. Raisins and candied citrus peel complete the classic recipe. Panettone is closer to a rich, sweet bread than to a stirred cake.

From Milan to Sicily: a sweet journey.

Panettone has its roots in Milan. Stories still surround its beginnings: one links the name to a kitchen boy called Toni and “Pan de Toni”; another tells of Ughetto’s love for Adalgisa. These are traditional legends, not established historical evidence. A regional festive tradition became an Italian Christmas classic, reinterpreted across the country. Sicilian versions might feature citrus or pistachio, while other makers explore chocolate, creams and distinctive packaging.

Artisan or industrial: what should you look for?

Price and a beautiful tin do not tell the whole story. Read the ingredients and compare recipes and fermentation information. Slow maturation and careful handling can shape flavour and texture. Industrial panettone can taste good too, while the word “artisan” alone is no guarantee. Choose according to your expectations for ingredients, crumb and flavour. Packaging matters for a gift; at your own breakfast table, the classic recipe may matter more.

Pistachio, chocolate or no candied fruit?

Fruit lovers can start with Tradizionale. For pistachio, check whether the cream is in the dough, a filling or supplied separately. Oro Verde comes with a spread. If you want panettone without candied fruit, Fiasconaro Pandorato is an option; the maker also describes it as having no raisins. “Chocolate” alone does not tell you everything else in the recipe. Always check the product description and the complete declaration if you have allergies.

Store it, slice it, serve it.

Keep unopened panettone dry and away from heat and direct sunlight. After opening, close the inner bag carefully. Follow the packaging instructions and date, especially for filled versions. Room temperature usually lets the soft crumb show better than fridge-cold serving. Use a long serrated knife without pressing hard. Pair it with espresso, tea or dessert wine. Leftover unfilled slices can also be lightly toasted or turned into French toast.

How much panettone do I need?

For planning, allow around 80–125 g per person as a practical guide rather than a fixed serving rule. A small slice may be enough after dinner; afternoon coffee might call for more. A 750 g panettone gives roughly 7 portions of 100 g, while 1 kg gives about 10. For gifts, count recipients instead. The calculator below helps you plan. Mini tins suit individual gestures, larger sizes suit a shared occasion.

Mini sizes suit small gestures, while larger panettoni are made for sharing. Dolce&Gabbana tins and gift sets are an option when presentation is part of the gift.

What should I check when buying pistachio panettone?

Compare the recipes: pistachios may feature in the topping, filling or a separate cream. Fiasconaro Oro Verde comes with a separate pistachio spread.

Is there panettone without candied fruit?

Yes. The maker describes Fiasconaro Pandorato as having no candied fruit or raisins. Check the exact version in the shop. Other flavour names do not automatically rule out these ingredients.
